Latgale-Style Cucumber Salad: A Winter Preserve with Six Recipe Variations

Sliced cucumbers with onions and dill, known as Latgale salad, remain one of the most popular winter preserves in Latvian households, with several recipe variations letting cooks pick their favourite taste.

Latgale salad, made from thinly sliced cucumbers combined with onions, is among the first preserves to disappear from pantry shelves once winter arrives. Many recipes also include dill, which gives the dish its distinctive aroma.

Two Common Preparation Methods

Households differ in how they prepare and preserve this dish. Some cooks fill jars with the cucumber mixture and then pasteurize them to extend shelf life, while others heat the cucumbers first and pour them, still hot, straight into jars that are sealed immediately afterward. Both approaches are widely used and result in slightly different textures and flavors.

A Matter of Taste

The final taste can vary considerably as well. Some prefer a sharper, more pronounced salty-sour flavor, while others favor a milder, gentler version. Because there is no single correct recipe, cooks are encouraged to experiment with proportions and techniques until they find what suits them best.

In total, six different versions of the recipe exist, varying in ingredient ratios and preparation steps. This variety gives home cooks the chance to try multiple approaches and settle on their favorite before the cucumber season ends and winter preserves take their place on the table.
