Season's zucchini: what to do with large garden squash

As the vegetable canning season continues, gardeners are advised that large, mature zucchini with thick skin and hardened seeds are best used for canning in jars together with other vegetables.

The preserving season is in full swing, and many gardens still have zucchini that have grown to an impressive size. Such specimens typically have thickened skin and developed seeds, making them less convenient to prepare fresh — the skin needs peeling and the seeds need removing.

It is precisely these fully matured zucchini that are best suited for preparing winter preserves — they can be placed in jars together with other vegetables, creating various flavor combinations. There are several ways to combine zucchini with other garden produce, and everyone can choose the option that suits their taste and available ingredients.
