When preparing pickled mushrooms for the winter season, it is recommended to select specific mushroom varieties and choose one of several marinade styles. Porcini mushrooms and birch boletes are recommended as the best choice for pickling, regardless of which recipe is used.

Three marinade options

There are three main marinade variants – a vegetable marinade, a classic marinade and a sweet-and-sour marinade. Each has its own flavor nuance, but they share one common trait.

Sweet-and-sour taste as a common thread

All three marinades feature a notable sweetness that, combined with vinegar's acidity, creates a balanced and expressive flavor. This sweet-and-sour combination is characteristic of all three marinade types, making them a popular choice for preserving mushrooms.

For those who do not enjoy a sweet taste in pickled mushrooms, the recipe can be adjusted by reducing the amount of sugar used. This allows everyone to tailor the marinade's intensity to their own preference without losing the basic preparation principle.
