Three types of marinades for mushrooms: vegetable, regular and sweet-and-sour

Three different marinade recipes are suitable for pickling mushrooms, with the best results achieved using porcini or birch boletes. The amount of sugar can be adjusted to taste.

During mushroom pickling season, several marinade recipes can come in handy – a vegetable marinade, a regular one, and a sweet-and-sour version. Regardless of which option is chosen, the best results come from using a specific type of mushroom.

Best suited mushrooms

For all three marinade recipes, porcini mushrooms and birch boletes (bay boletes) are named as the most suitable choice. These mushrooms absorb the marinade's flavor well and retain their texture during the pickling process.

Balance of flavors

All three marinades are noted for their fairly pronounced sweetness, which, combined with the sourness of vinegar, creates a balanced and pleasant taste. This is a common element that unites all three recipes, even though they differ from each other in composition and preparation method.

For those who don't find a sweet taste appealing in pickled mushrooms, there is an option to adjust the recipe to their own liking – simply by reducing the amount of added sugar. This allows everyone to prepare the marinade according to their own taste without losing the basic preparation principle.
