Apple season is here: two recipes for a sweet breakfast or snack
With apple season underway, here are two easy homemade recipes — apple pancakes and an apple crumble cake.

As apple season gets into full swing, it's a good time to try recipes built around this seasonal fruit. Below are two options — light pancakes and a heartier crumble-topped cake.
Apple pancakes
This recipe calls for four large apples, flour, eggs, sugar, salt and oil for frying. The egg yolks are whisked with sugar and salt, then water and flour are added to form a fairly thick batter, into which whipped egg whites are gently folded. The apples are cored and sliced into rounds, each dipped into the batter and fried in hot oil. The pancakes pair well with jam or sour cream.
Apple crumble cake
For a more filling treat, this cake requires eight large apples, wheat flour, kefir, sugar, eggs, butter, sour cream, vanilla sugar, cinnamon and baking powder. A base batter is first made from part of the flour, kefir, eggs, sugar, baking powder and vanilla sugar, then chilled for about 20-30 minutes. The apples are peeled and cut into small pieces, while a separate mixture of egg, sour cream and sugar is prepared. The batter is spread on a baking sheet lined with buttered parchment, topped with the apple pieces, then covered with the egg-cream mixture and sprinkled with sugar and cinnamon. A crumble topping made from flour, sugar and cold butter rubbed together is scattered on top. The cake bakes at 200 degrees for about 30 minutes.
