Gardening tip: what to do with overgrown cucumbers

Experienced home canner Kristīne Maka shares a tried-and-tested way to use cucumbers that have overgrown to the size of squash in the garden or greenhouse.

During the busy summer season, it often happens that after just a couple of days without checking the garden or greenhouse, some cucumbers go unnoticed and grow far larger than usual — sometimes reaching the size of a squash.

A solution for overgrown cucumbers

In such cases, many gardeners are unsure what to do with the oversized cucumbers, since fresh ones no longer taste as good as small, young cucumbers, and their skin and seeds tend to become coarser.

Experienced canning expert Kristīne Maka shares a way to put such cucumbers to good use rather than throwing them away, offering a tested recipe for processing them.

This approach allows gardeners to make full use of their harvest, ensuring that no cucumber — even an overgrown one — goes to waste, and turning it instead into a tasty preserved product for later use.
