Autumn is prime time for apples, and one of the most popular ways to use them is in a charlotte — a simple apple cake. The recipe calls for 5–6 apples, 3–4 eggs, a glass of sugar, a glass of rye flour, a handful of raisins, a teaspoon of vanilla sugar and ground cinnamon, with powdered sugar for serving.
Preparation
First, grease the baking dish and its sides with butter; a light dusting of flour on top can help prevent the cake from sticking or burning. Peel the apples, remove the cores, and cut them into 2–3 centimeter pieces before placing them in the prepared dish — the more apples used, the tastier the result.
Beat the eggs together with the sugar, though the amount of sugar can be reduced or substituted with other sweeteners. Add raisins and vanilla sugar to the batter, then mix in the flour. Those who prefer a fluffier texture can add a small amount of baking powder.
Pour the prepared batter over the apples in the dish. Since the batter is fairly thick, it needs to be spread evenly with a spoon or spatula so it covers all the apple pieces. Sprinkle cinnamon on top and bake in an oven preheated to 180 degrees for about 30 minutes.
