Taste of summer in a bowl: watermelon, cucumber and feta salad with mint and basil
LA.lv shares a simple summer salad recipe combining watermelon, cucumber and feta cheese, enhanced with mint and basil leaves. The recipe was created together with Airita.

On hot summer days, when something light and refreshing is in order, LA.lv offers a recipe for a fresh salad built around watermelon, cucumber and feta cheese. The recipe was developed together with Airita, and its creators promise a restaurant-quality result despite the short ingredient list.
Ingredients needed
To make the salad you will need seedless watermelon, cucumbers, about 20 mint leaves and about 20 basil leaves, feta cheese, one lime (for its zest), olive oil, salt and freshly ground black pepper to taste. Chili flakes can be added optionally for extra spiciness.
Preparation steps
First, the watermelon should be seeded and cut into medium-sized pieces, while fresh cucumbers should be washed and likewise cut into pieces. The mint and basil leaves can be chopped finely or left whole if they are small, depending on the desired texture of the salad.
In a large bowl, combine the watermelon, cucumbers and both types of herbs, then add crumbled feta cheese and grated lime zest. Drizzle the salad with olive oil, add a pinch of salt and freshly ground black pepper, and those who prefer more heat can sprinkle on some chili flakes.
Finally, gently mix everything together so that the watermelon pieces keep their shape and the feta retains its crumbly texture. The creators recommend enjoying the salad right after preparing it, when it is freshest and tastes best.
