Apple Pie "Charlotte": A Classic Recipe That Works Every Time

A simple, tried-and-tested recipe for the classic apple "Charlotte" pie, suitable even for first-time bakers. The result is light, fragrant and not overly sweet.

Apple "Charlotte" pie is a treat found in nearly every household and often considered a near-legendary favorite. It is light, fragrant and not too sweet, appealing to both children and adults alike. Many home cooks have their own small trick they rely on when baking it.

Ingredients needed

To make the pie you will need one glass of sugar, five eggs, one glass of wheat flour, at least seven medium-sized apples, one tablespoon of vegetable oil, and half a teaspoon of baking soda.

Preparation steps

First, preheat the oven to 180 degrees. Separate the egg whites from the yolks, then whip the whites thoroughly with a mixer, gradually adding the sugar. While continuing to beat, add the yolks one at a time, followed by the soda and flour, until the batter reaches a cream-like consistency.

Grease a baking dish with oil or line it with baking paper. Pour in half of the batter, arrange slices of peeled apples on top, then cover with the remaining batter.

Place the dish in the preheated oven and raise the temperature to 200 degrees for about three minutes, then lower it back to 180 degrees, letting the pie bake for a further 20 to 25 minutes. The pie is ready once its surface turns golden brown. After removing it from the oven, it can be dusted with cinnamon or brown sugar if desired.
