Cold Tomato and Cucumber Soup – Two Refreshing Alternatives
If you're tired of the traditional cold beet soup, try making a cold tomato or cucumber soup. Both recipes are simple and quick to prepare.

Cold Tomato Soup
This soup is perfect for hot days. Serve it with toasted baguette or focaccia. For a heartier version, add sautéed chorizo slices before serving.
Ingredients (6 servings): 1 kg tomatoes, 250 ml cold vegetable broth, 2 large garlic cloves, 4 tbsp olive oil, 3 tbsp cream, 2 tbsp good balsamic vinegar, 2 tbsp shredded basil leaves, 1 tbsp chopped herbs (thyme, rosemary, oregano, parsley), salt, pepper, sugar.
Preparation: Chop the tomatoes and blend with all other ingredients except cream and basil. Season to taste with spices and balsamic vinegar. Chill the soup, pour into bowls, add a teaspoon of cream, and sprinkle with basil.
Cold Cucumber Soup
This soup is especially refreshing and goes well with juicy shrimp.
Ingredients (4 servings): ½ liter plain yogurt, 1 long cucumber, 1 garlic clove, 1 tsp sugar, 1 tsp salt, 1 tsp mint leaves, ½ tsp roasted ground cumin, juice of ½ lime, ground pepper. For serving: dill, shrimp.
Preparation: Place all ingredients in a blender and blend until smooth. Adjust salt, pepper, sugar, or lime juice to taste. Serve chilled with finely chopped dill and shrimp.
