Cold sweet soups – a refreshing summer dessert made from berries and fruits

The article presents three recipes for cold sweet soups – strawberry, rhubarb, and blueberry with dumplings – as a cooling summer dessert.

On a hot summer day, a cold strawberry soup can be a perfect dessert for both adults and children. The portal Jauns.lv shares three recipes for sweet cold soups made from seasonal berries and fruits.

Cold strawberry soup

To prepare this refreshing dessert, you need 750 g of strawberries, 500 g of vanilla or strawberry ice cream, five tablespoons of sugar, and the juice of two lemons. Blend the strawberries with sugar and lemon juice, then chill the mixture in the refrigerator. Pour the soup into deep bowls, add a scoop of ice cream, and garnish with whole strawberries.

Sweet rhubarb soup

For rhubarb soup, you need five rhubarb stalks, 200 g of sugar, and 2.5 tablespoons of potato starch. Peel and chop the rhubarb, boil it in water until soft, then add sugar. Dilute the potato starch with cold water and, stirring constantly, add it to the soup. Serve with rice or semolina pudding, or whipped cream.

Blueberry soup with dumplings

This soup requires a bit more effort. For the soup: 500 g of blueberries, 150 g of sugar, one tablespoon of potato starch, half a lemon's zest and juice, and one liter of water. For the dumplings: 120 g of wheat flour, 60 g of milk, one egg, salt, sugar, and 1.5 liters of water. First, prepare the soup: boil water with lemon zest, add blueberries, and cook until the berries partially dissolve. Then add lemon juice, sugar, and starch dissolved in water, bring to a boil again, and cool. For the dumplings, mix milk, egg yolk, salt, and sugar, add flour, then fold in stiffly beaten egg white. Form dumplings with a spoon and cook in boiling salted water until done. Add the cooled dumplings to the blueberry soup.
