Taste Buds: A Reliable Tool for Food Technologists

Professor Evita Straumīte from the Latvia University of Life Sciences and Technologies explains that taste is one of the hardest senses to deceive and can serve as a precise measurement tool in food technology.

Taste is one of the five basic human senses, and unlike sight or hearing, it is extremely difficult to fool. While we can be mistaken in what we see or hear, our taste buds rarely err – they accurately identify what we are eating. Food technologists and scientists use this trait as a valuable resource in developing new products and controlling quality.

In the Latvian Radio program "Zināmais nezināmajā," Professor Evita Straumīte from the Faculty of Agriculture and Food Technology at the Latvia University of Life Sciences and Technologies explained that taste perception is not only innate but can also be trained. People with a particularly developed sense of taste can become professional tasters, helping companies ensure consistent product quality.

In food technology, taste is one of the main criteria by which consumers choose a product. Therefore, researchers and producers pay close attention to how different ingredients and processes affect the flavor profile. The sensitivity of taste buds can also be used to determine freshness, for example, in dairy products or meat.

Professor Straumīte emphasized that although technologies such as electronic tasting systems are becoming increasingly popular, the human sense of taste remains irreplaceable. It allows perceiving nuances that measuring instruments cannot access – such as complex combinations of bitterness or acidity.

Thus, taste buds are not only a way to enjoy food but also an important tool in the food industry, helping to create products that meet consumer preferences and tastes.
