When the Dough Is Right, There Are No Wrong Pies: The Tradition of "Lejas Kaupēni"

Landscape designer and gardener Vineta Radziņa, who runs the "Lejas Kaupēni" homestead in the Dzērbene area, takes charge of preparing the pie dough and filling every Midsummer according to her refined recipe. However, folding the pies is a communal activity for all household members and guests alike.
Vineta says that during the festivities, her yard is always full of people, and everyone has a job to do. She has baked bread and prepared the pie dough in a large bowl, but the pies are baked by everyone – young and old, men and women.
This household firmly believes that there are no wrong pies. Whatever shape each person folds is the right one and the best. The key is the dough – when it is properly made, no pie can go wrong.
