Summer is the season for ice cream, but not always the treat stays perfect. When you open a package and see only ice crystals instead of a creamy mass, the ice cream has likely been refrozen.
The problem often arises from improper transportation or power outages in stores, causing the ice cream to melt and then freeze again. Unfortunately, such a product cannot regain its original texture – ice crystals remain and creaminess is lost.
Iluta Roberta, producer of the Valmiera ice cream “Muu”, confirms that melted and refrozen ice cream cannot be saved, so it is best to avoid buying it already damaged.
