Supermarket Chain Switches to White Eggs: Does Color Affect Quality?

UK supermarket chain Sainsbury's will stop selling brown eggs in favor of white eggs due to a lower carbon footprint. Experts clarify that egg color does not indicate nutritional value.

British retailer Sainsbury's has announced it will cease selling brown eggs and transition entirely to white eggs. The decision is based on environmental considerations – the company's research shows that white eggs have a carbon footprint approximately 12.7% lower than brown eggs.

According to Sainsbury's, the difference arises because hens that lay white eggs require less feed to produce the same quantity of eggs. Since feed production accounts for 50–60% of the total environmental impact of egg production, this reduction in resources yields significant benefits. The UK consumes about 14.5 billion eggs annually, generating around 4.35 million tonnes of CO₂ emissions. If the entire industry reduced emissions by 12.7%, it would mean over 550,000 fewer tonnes of CO₂ per year – equivalent to removing nearly 300,000 cars from the roads.

What Does Color Say About Quality?

Many consumers believe that brown eggs are healthier and that a bright orange yolk indicates higher quality. However, experts say these perceptions are misleading. Eggshell color is determined by the breed of hen – white hens lay white eggs, while brown or reddish-brown hens lay brown eggs. Yolk color is primarily influenced by pigments in the feed, such as carotenoids from corn, paprika, or carrots. A 2024 US study confirmed that paprika enhances yolk color but does not affect the egg's overall nutritional value.

The organization British Lion Eggs emphasizes that the nutritional content of eggs does not differ based on shell or yolk color. Thus, Sainsbury's decision appears to be as much a marketing move as an environmentally beneficial one.
