Spicy Plum Chutney: A Gourmet Sauce You Can Make at Home

Latvian media have shared a recipe for spicy plum chutney — a sweet-sour condiment made from plums, apples, chili and spices.

Chutney is a sweet-sour spicy sauce made by slowly cooking fruits, berries or vegetables together with sugar, vinegar and spices. Such a side dish refreshes the palate and enhances the flavour of cheese, roast meat, pâté and various snacks.

The recipe from Latvian media uses plums and apples. To prepare it, you need one kilogram of plums, two firm sour white apples, three garlic cloves, one hot chili pepper, two cloves, one teaspoon of ground ginger, two pinches of ground black pepper, one teaspoon of salt, 240 grams of sugar, 240 ml of red wine vinegar and 240 ml of apple cider vinegar.

First, remove the stones from the plums. Then chop the plums, apples (with the peel), chili and garlic. Mix everything with the remaining spices into a smooth mass. In a separate pot, make a syrup by combining apple cider vinegar, red wine vinegar and sugar. Add the chopped mixture to the syrup, season with salt and cook for an hour and a half until the sauce thickens.

Once ready, take the pot off the heat and fill sterilised jars with the chutney, sealing them immediately. For longer storage, the jars can be pasteurized. The recipe was published by author Inga Patmalniece in the magazine "Praktiskais Latvietis".
