As apple trees generously bear fruit in autumn, a simple apple pancake recipe using everyday ingredients comes in handy, producing juicy, quickly prepared pancakes.

During the autumn season, when many gardens see apple trees bearing abundant fruit, ideas for using fresh apples in the kitchen become useful. One option is apple pancakes — a dish that requires little time and simple ingredients.
Ingredients needed
The recipe calls for about 200 grams of flour, 300 milliliters of kefir, two eggs, 2–3 large apples, a teaspoon of cinnamon or vanilla sugar, sugar to taste, a pinch of salt, a bit of baking soda, and oil for frying.
Preparation process
In a bowl, beat the eggs together with sugar and salt. Then add kefir that has had baking soda stirred into it beforehand. Mix the flour with cinnamon and sift it into the batter, stirring thoroughly to avoid lumps — the batter should have the consistency of cream.
The apples should be peeled and grated on a coarse grater, then the grated mixture is gently folded into the already prepared batter. For frying, heat a pan and cook the pancakes over low heat so the apple pieces have time to soften, giving the pancakes their desired texture.
Apple pancakes are one way to use the fruit available in autumn — apples can also be baked or boiled, and the peels can additionally be used to make kvass.
