Viral summer dessert: watermelon ‘ice cream’ that needs no machine

A simple recipe for homemade watermelon ‘ice cream’ has gone viral on social media, using the fruit as both ingredient and bowl. After freezing overnight, the dessert is ready in a few minutes of scraping and stirring.

TikTok and Instagram have recently been flooded with a surprisingly simple and refreshing summer recipe. The dish is a homemade watermelon ‘ice cream’ — though by texture and ingredients it is closer to a fruit sorbet. According to the viral method, no ice cream machine or complicated culinary skills are needed.

The approach is straightforward: the watermelon works both as the main ingredient and as the bowl in which the dessert is made. First, the fruit is cut in half, and one half is scooped out with a spoon to create a bowl shape. That shell is wrapped in plastic wrap and placed in the freezer overnight. Once fully frozen, the half is taken out and the plastic wrap is removed. A little sweet cream or any chosen milk is poured into the hollowed shell. Then, using a firm spoon, the frozen sides are scraped while stirring, mixing the icy fruit shavings with the milk. After a few minutes, the liquid turns into a thick, creamy and frozen mass.

The recipe is easy to adapt: instead of dairy cream or milk, people can use almond, coconut or other plant-based milk, making the dessert completely lactose-free. Creative users on social media have also tried using sweet melon instead of watermelon, reporting that the dessert turns out excellent and creamy in that version too.

For extra sweetness, the final treat can be drizzled with a little honey. It is best enjoyed immediately, before it melts. The dish has been described as an ideal way to cool down with something light and healthy on hot summer days.
