Three quick, nutritious breakfast recipes for busy school mornings

With the new school year underway, retailer Lidl has shared three simple breakfast recipes that take up to 10 minutes to prepare and help ease the morning rush before school. Each dish can be prepared the evening before, leaving only serving or a quick reheat for the morning.

As the new school year begins, many families struggle to find time for a proper breakfast in the morning rush. To help with this, retailer Lidl has shared advice on choosing ingredients along with three recipes that can be made quickly using simple, easily available products. The advice also stresses that not just variety but also the quality of ingredients, especially dairy products, matters, since these provide protein and calcium important for growing children.

Overnight oats

One of the easiest options is oatmeal prepared the night before. Milk or a plant-based drink, oat flakes, honey or agave syrup, and cinnamon are combined in a container and left to sit in the refrigerator overnight. Before serving, the oats can be topped with fruit, berries, nuts, or cocoa and coconut flakes. Prepared this way, the oats keep their taste for several days in the fridge, and the method also offers a way to use up fruit already at home.

Boiled curd dumplings

The second recipe involves mixing curd cheese, egg, flour, and sugar into a dough, which can also be rolled and cut into pieces the evening before. In the morning, the dumplings only need to be boiled in water for a few minutes until they float to the surface, then served with yogurt, berries, and honey.

Baked omelette muffins

For those who prefer savory breakfasts, an omelette muffin recipe is offered, made from eggs, milk, cheese, spinach, and tomatoes. The muffins are baked in the oven the night before, and in the morning only need a quick reheat. This recipe is also convenient because it allows use of leftover vegetables in the fridge, such as courgette or bell pepper.
