Light and Airy Apricot Dessert: A Simple Recipe
A recipe for a light apricot dessert with cream, yogurt, and cookies – quick to prepare and perfect for summer.

This dessert combines apricots with an airy cream mixture and cookie crumbs to create a refreshing treat.
Ingredients for four servings: six ripe apricots, 250 ml heavy cream (35% fat), 200 g Greek yogurt, 2–3 tablespoons powdered sugar, 1 teaspoon vanilla extract, 8–10 amaretti or shortbread cookies, and fresh mint leaves for garnish.
Preparation: Wash the apricots, remove the pits, and cut into small pieces. Whip the cold cream with powdered sugar and vanilla until stiff peaks form. Gently fold in the yogurt while maintaining the cream's lightness. Lightly crush the cookies. In dessert glasses, layer cookie crumbs, cream, and apricot pieces, repeating the layers. Refrigerate for at least 30 minutes before serving. Garnish with apricot slices, cookie crumbs, and mint leaves.
Tip: For a more intense flavor, drizzle the apricots with a teaspoon of honey and a few drops of lemon juice. For a festive version, add a handful of toasted almond flakes or grated white chocolate.
