Gunārs Ķirsons unveils plans for new cafe chain 'Daba' and predicts price hikes in catering

Gunārs Ķirsons, the founder of Lido who has since left the company, has revealed details about his new venture – a cafe chain named 'Daba'. The first outlet will open in Mežaparks in June, followed by another on Brīvības Street in autumn.

The concept focuses on fast, healthy dining, with meals served within 30 seconds to two minutes. Ķirsons wants to promote healthy eating and reduce reliance on supplements. The interiors will feature folk-inspired design, and prices will be kept affordable.

One innovation is a payment system allowing customers to pay later, for example after a month. Ķirsons expects this to be implemented within a year, with talks with banks already underway.

He also plans to revive the 'Cherry Fix' fast-food chain, which was put on hold due to a lack of production facilities. A new experimental production plant will be built near the Mežaparks project, with potential expansion later.

Regarding industry pricing, Ķirsons acknowledges that geopolitical factors will likely drive up costs in the second half of the year. However, he believes entrepreneurs should absorb part of the increase. 'I will try to set an example and show that it is possible to work without raising prices,' he stated.

Ķirsons criticized bureaucracy but praised the Rīga City Development Department for its cooperation on his project. He also stressed the importance of supporting local farmers and domestic production.

Special attention will be given to delivery services – Ķirsons plans a proprietary system with stylish cars and drivers in frock coats and top hats, making food delivery an experience. Vehicles will have separate compartments for hot and cold food to ensure quality.

Ķirsons declined to comment on his departure from Lido, saying he will revisit the topic after the new outlet opens. He remains willing to advise Lido if asked.
