Mold on food raises a question many people ask: is it safe to eat grandmother's homemade jam (zapte) after the moldy top layer has been removed, and can bread still be eaten if just one loaf has spoiled? A report by Latvian public media LSM presents a researcher's view on these questions.

According to her, many molds release fungal toxins that can affect human health. The problem is that the damage caused by mold can be cumulative. This means the effects do not always appear immediately after moldy food is eaten, but may show up only after many years.

For this reason, the absence of any complaints after eating moldy food does not in itself show that it was harmless. The available excerpt of the source gives no further details on which products or types of mold are more dangerous, how to handle specific foods, or what health consequences may arise.
