Sweet Potato Burger: A Healthy Lunch Box Idea for Schoolchildren
A recipe published by Latvian public media LSM offers a burger made of sweet potato and chickpeas for a schoolchild's lunch box. It is paired with a snack of pear, cashews and a drink.

The Russian-language service of LSM, Latvia's public broadcaster, has published a recipe for a burger made of sweet potato and chickpeas, intended for a schoolchild's lunch box. The authors describe it as a filling dish that provides nutrients a growing body needs. The recipe was first published on LSM.lv on 2 October 2023.
Ingredients
The burger needs one brioche bun, two tomato slices, two iceberg lettuce leaves, two tablespoons of Greek yogurt and two slices of Edam cheese. For the patty, the recipe calls for 500 g of sweet potato, 400 g of canned chickpeas (rinsed and drained), one onion, 25 g of fresh coriander, 30 g of grated Parmesan, 30 g of flour and olive oil for frying.
Preparation
Bring water to a boil and cook the sweet potato, cut into wedges, for about 10 minutes until soft. Drain the water, add the chickpeas and mash everything thoroughly into a purée. Transfer the mixture to a bowl and let it cool to room temperature.
Lightly fry the finely chopped onion in a pan. Add it to the sweet potato and chickpea mixture together with the coriander, Parmesan and flour. Salt and pepper can be added to taste. Shape the mixture into a burger patty and fry it in a pan.
Cut the brioche bun in half. On the bottom half, place a lettuce leaf, the patty, the cheese slices and the tomatoes, along with cucumbers topped with Greek yogurt. Cover with the other half of the bun.
Snack
For the side, the recipe suggests sliced pear, a handful of cashews and 220 ml of water or a non-carbonated fruit drink with no added sugar.
