New Recipes for Jāņi: Zucchini-Cheese Skewers and Rhubarb-Strawberry Marshmallows

Retail chain ELVI, in collaboration with nutritionist and chef Jevgēnija Jansone, offers two modern recipes for Midsummer celebrations – vegetarian zucchini and cheese skewers and homemade rhubarb-strawberry marshmallows.

As Jāņi approaches, the retail chain ELVI, together with nutritionist and chef Jevgēnija Jansone, has prepared two recipes for a modern Midsummer table. The first recipe is for zucchini and cheese skewers, ready in 30 minutes and serving 4–6 portions. Ingredients include young zucchini, grilling cheese (such as Jāņu cheese or halloumi), lemon juice, butter, olive oil, salt, pepper, dill, and garlic. First, prepare herb butter, grill zucchini slices, then assemble skewers alternating zucchini and cheese, and briefly grill until the cheese is browned.

The second recipe is for rhubarb-strawberry marshmallows, yielding 30–40 pieces. Preparation takes 30 minutes, plus setting time. Ingredients include gelatin, rhubarb, strawberries, sugar, honey, water, salt, vanilla sugar, potato or corn starch, and powdered sugar. First, bloom gelatin in water, then cook fruit puree, add honey and spices, pour hot syrup into gelatin and whip for 10–15 minutes until light and fluffy. Pour into a pan, refrigerate for at least 2 hours, cut into pieces, and coat with starch-powdered sugar mixture. These marshmallows can be eaten as is or grilled on skewers.
